Tips


puri : 


Ingredients


-> maida or all purpose flour --  2 tspns

-> suji ravva -- 1 cup 

-> oil -- 1 spn 

-> water -- as required


process


   Take a bowl and add 1 cup suji ravva. Add 2 spns maida or all purpose flour.

Add 1 spoon oil , mix them together to crumble.

Add water gradually and knead it into dough.



 Apply 1 spoon oil on the dough ball and 

cover it with a wet cloth. It should rest for 15-20 minutes.

It must cover with wet cloth, by this dough won't dry.



 If the dough dried, puri won't puff.

So, covering with wet cloth is must and should.

After 15-20 minutes, divide the dough into two parts. Take one part and cover the other part with wet cloth

Flatten the dough like a chapati and cut small circles using a mould .

Remove puris and place them on a wet cloth to prevent from drying.

Do all puris in the same way.



switch on the stove, take a deep kadai pour oil and heat it.

After oil heated keep flame on medium and drop one puri after other and fry them.



while frying pour oil on the puri to let puri puff.

when puri turns golden brown, remove from oil and take into a plate. Fry all puris in the same way.

let puris cool and dry in air, don't close with lid. After 1 and 1/2 to 2 hours puris will become hard and crispy.

Puffy and crispy puris are ready. Have them with pani and enjoy.



POTATO MASALA   (For stuffing)


 Ingredients:


-> Potatoes

-> red chilli powder -- as required

-> salt -- as required

-> chat masala -- 1 spoon

-> cumin powder -- 1 spoon

-> coriander 

Process

      Boil potatoes and peel off them.



Mash the boiled potatoes. In a bowl take mashed potatoes, add required amount of salt,

required amount of red chilli powder, 1 spoon cumin powder, 1 spoon chat masala

and finely chopped coriander. Mix them together. 

Potatoes masala for stuffing is ready.



Pani for panipuri


ingredients


-> coriander

-> mint leaves

-> tamarind.

-> chilli

-> salt or black salt

-> cumin powder

->chat masala

-> red chilli powder

Process

Add coriander, tamarind, mint leaves, one  chili (add according to your taste) to mixer jar and blend them into paste.



Strain the paste into a bowl. 


To the strained liquid add 1 tspn cumin powder, 

1 spoon chat masala, required amount of red chili powder, required amount of normal salt or black salt.

Mix them together. Add water and adjust the consistency and also adjust the taste of salt and chili powder.

Pani for panipuri is ready .



very yummy panipuri ready.


 



Now make a hole in crispy puri, stuff the potato masala, dip the potato stuffed puri in pani and fill pani in it.

TIPS

  • Must cover the dough with wet cloth.
  • Must keep oil on medium flame.
  • Flattened dough must be thin.
  • Cover puris with a wet cloth before frying.
  • Pour oil while frying the puri.
  • Let fried puris dry at-least  2 hours.
